Observation (CORRECTED DURING INSPECTION): -Knives for cutting produce in back storage area showing signs of food debris on blades while stored on wall mount.
-Questioned employee on dish washing routine and found knives were soaked overnight in soap and water.
Corrective Action(s): -Wash and sanitize utensils thoroughly with soap and water, rinse, then sanitize.
-Employee demonstrated ability to make bleach soluation in sink at a 100ppm concentration and placed knives here.
