Freezer at -14 degrees C.*
Hot holding temperatures at 60 degrees C or more.
Probe thermometer available on site for internal food temperature checks.
Temperature logs maintained.
Food is covered and stored off the ground.
Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Three compartment sink is supplied with hot and cold running water and three sink plugs. Sanitizer dispenser tested at 200 ppm quaternary ammonium compounds (quats).
Sanitizer available in cups, buckets, and labeled spray bottle at 200 ppm quats.
Test strips within expiry available on site.
In use utensils stored in ice water.
High temperature dishwasher measured 73 degrees C at the utensil surface during the final rinse (minimum requirement: 71 degrees C at the utensil surface).
