203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Cooked rice cooling on a counter top in a large deep stainless steel colander.
Corrective Action(s): Cooked foods must be cooled as fast as possible. Rice can be cooled more quickly by using the large shallow stainless steel inserts in the kitchen. Informed staff to use the shallow inserts. Staff corrected at time of inspection.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): In use wiping cloths not stored in bleach sanitizer bucket. Buckets for bleach sanitizer are too small for the practical use of storing in use wiping cloths.
Corrective Action(s): Wiping cloths need to be stored in bleach sanitizer to prevent bacteria from growing on them. The buckets need to be large enough to fully submerge one or two cloths with additional room for wringing of the cloths. Bleach sanitizer for front servery and kitchen both had a concentration of at least 200ppm. Instructed staff to correct at time of inspection.

Observation: Fruit flies found in the 2-compartment sink area.
Corrective Action(s): Keep the 2-compartment sink area as clean and as dry as possible to prevent fruit flies. Also use sticky fly traps to help control the existing flies.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Cloth towel lining the stainless steel insert for naan in the steam table.
Corrective Action(s): Do not use cloth towels for food storage purposes. Staff said the cloth towel helps prevent the naan from drying out. Instructed staff to remove the towel and replace the insert with a clean one. The insert did not have any naan stored in it at time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Wooden board on dry storage shelf (beside stand up freezer) is damaged.
2. Rubber seals for the entrance to the walk in cooler require replacement and the metal flashing/door stop requires repair.
Corrective Action(s): 1. Shelves need to be smooth impervious to moisture and easy to clean. Replace all damaged boards on the shelf.
2. Worn rubber seals and a damaged door stop may be preventing the walk in cooler from maintaining a temperature of 4 degrees Celsius or less. At time of inspection, the temperature of the walk in cooler was 5.7 degrees Celsius. Replace the rubber seals and repair the door stop. The temperature of the walk in cooler also needs to be monitored and recorded twice per day, and appropriate actions taken to make sure the temperature is 4 degrees Cesius or less. Also, do not place hot foods into the walk in cooler until the foods have cooled down to room temperature.
