premise sanitation satisfactory sinks stocked with soap and paper towels dishwasher rinse cycle has 50ppm chlorine sanitizer all coolers at 4C freezers at -18C hot holding of duck, pork... at approximately 50C however staff monitor holding time - not more than 2hrs in display case floor is clean food is properly stored 2 chopping block knives voluntarily disposed of as there is rust on blades no other concerns at this time.
