Observation: Poor cleaning and sanitation is noted in entire facility including all equipment ( inside out) under, behind beside all equipment, hand washing sink in sushi prep area and kitchen, wall, floor ....

*** List of menu is to be revised - facility does not have enough space for all the menu item- revise and remove items
***Remove any items that are not used in daily operation to create more space.

-Temp of coolers and freezers are ok
-Dishwasher chlorine residual is >100 ppm
-Bleach solution in spray bottle >100 ppm

*** Wiping rags must be in bleach solution at all time.

All issues to be fully addressed ( except renovation and lighting- these to be arranged with time line by follow up inspection to prevent further enforcement actions by FHA.
