Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temp. dishwasher does not reach 71 degrees C on plate surface during sanitizing cycle.
Correction: 71 degrees C must be reached during sanitizing cycle to properly sanitize the food contact surfaces. Stop using the high temp. dishwasher until it is fixed and instead use the 3 compartment sink with Quat sanitizer for final sanitizing step.
Correction date: 1 week.

Follow up inspection.
Commercial dishwasher is not in use and a part is on order. The dishwasher will not be used unless it provides a final sanitizing rinse such as 82C/165F measured at the manifold gauge or 71C/160F measured inside of the machine.
Today, staff are using the 3 compartment sink to wash, rinse, sanitize (200ppm quats sanitizer automatically dispensed into 3rd sink), and air dry all bowls and utensils.
Triple sink for warewashing, prep sink(s), and several hand sinks available - good. Manual dishwashing is acceptable as the food deli is using single service (disposable) utensils and bowls etc. for take out only.
Continue to follow a routine cleaning schedule.
