306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulation of dust and some grease on the ceiling tiles (especially around air diffusers), upper walls, and on the pipes near the fire suppression system. The dust and grease can fall into food and contaminate it.
Corrective Action(s): Immediately wash and clean the dust and grease from the mentioned areas. Ensure this is being done monthly to prevent build up of this.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Found duct tape on food containers and lids. Duct tape is not food grade, durable or cleanable which will allow pathogens to remain.
2) Raw/unsealed wood found on the corner of a counter top and the edges of counter tops in the kitchen. The raw wood is not sealed or cleanable and will absorb food.
Corrective Action(s): 1) Immediately discard all damaged, cracked, broken, chipped or duct tapes food containers and lids. Puchase new food containers and lids to store food.

2) Repair and/or seal the raw wood so that it is sealed or covered with a material that is durable, smooth, sealed and cleanable.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; and thermometers present.
- Hand sinks stocked with running hot and cold water, liquid soap and paper towels.
- High temperature dishwasher had a rinse cycle temperature of 71C at the plate's surface, as per max/min thermometer. Ensure to add a scoop of powdered dishwashing soap to each cycle. Ensure to turn the dishwasher on when you arrive to allow it to warm up. Only use the dishwasher, when both temperature gauges reach the correct temperatures or hotter (180F and 150F).
- All foods stored in food grade containers; covered; foods stored in groups with proteins separate and below RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use. FIFO rules being followed.
- FoodSafe certified staff present (expiry date of 2026).
- General sanitation level is good.
- No signs of pests.
- Back door is propped open, but it has a screen door to prevent the entry of pests.
- All previous violations have been corrected.
