No evidence of rodent observed at the time of inspection. Good.
General sanitation of all areas of the kitchen is good.

New weather -stripping has been installed underneath the receiving area doors.
A number of new snap traps have been placed in dry storage areas and hallways by the pest control contractor.
A detailed cleaning checklist has been developed and implemented to track cleaning activities.
Dry storage and general storage areas appear more organized and items are stored at least 6 inches off the floor
New washable ceiling tiles have been installed near de-commissioned walk-in cooler.
Drywall has been repaired/patched in dry storage room and pallets are now stored away from the wall.
New drywall and paint in Cedar Hills ECU kitchen.
Pest monitoring is conducted monthly and on a request basis by Steritech Rentokil services.

LMH MAIN KITCHEN:

* Recommended removing loose paper clips from the tray portioning room ( Corrected during the inspection).
All small walk-in coolers registered 4 degrees C or colder.
Main walk-in cooler < 4 C.
Main walk-in freezer registered -20 C or below.
Upright cooler below 4 C.
Sandwich preparation cooler below 4 C.
All hand wash stations supplied with liquid soap and paper towels.
All food handling staff wear aprons and hair nets.
Quats sanitizer ( Ostro san) at the dispenser and in spray bottles tested 200 ppm.
All spray bottles of cleaners and sanitizers accurately labelled.
Under-counter dishwasher reached 75.6 degrees C at the plate surface during final rinse
Sanitizer and dishwasher logs are up to date.
Main conveyor dishwasher registered 74 degrees C at the plate during final rinse.
