Rodent droppings noted. Remove droppings and monitor. Pest control is provided. Ensure the greasy milk crate is cleaned before putting away. Temperature of the steam table and refrigeration units are satisfactory. Temperature checks are being done. Adjust quats sanitizer to 200ppm. It is currently too strong.
