304 - Premises not free of pests [s. 26(a)]
Observation: Drain fly problem persists. Traps noted around grease trap and cooler area. Flies still observed coming out of grease trap lid where unit not sealed. Ants also noted coming out of and wandering around grease trap lid.
**New lid on order.
Fly activity may also be centering at back of cooling/freezer units, possibly at the condenser drip pans. Lots of flies noted, but cobwebs also noted so might be an issue of poor cleaning practices.
Corrective Action(s): - Continue to seal off grease trap lid as temporary measure. This will help guage the contribution this unit to the fly breeding.
- Clean up the kitchen in all areas to help evaluate activity patterns of flies. Above and below all equipment and hard to reach areas.
- Continue to identify additional breeding environments as discussed and implement controls.
- Continue to work wirh pest control to deal with ants and flies as discussed.
Violation Score: 9

Comments

Kitchen notes:
- Bug zapper removed. Part of the trap has been silicone sealed, but the other part plus the bolt screw down not sealed. Less concentration of drain flies around grease trap, but notable on floor and walls in this area.
- Floor wall behind some of the equipment and cooling units, and storage room area still not cleaned as there are bugs, food and cobwebs visible.
- Drain pipes below double sinks cleaner, but still could be a breeding source for drain flies and is leaking.
- Flies noted on food prep surfaces and on top of other shelves, coolers and equipment.

There must be a thorough clean up in the kitchen to get rid of old debris accumulations to help inform current pest activity patterns.
