203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Bars of rice cake on trays were stacked in sliding door cooler when they were still very hot (41C-46C). Temperature of cooler and items which had been stored in cooler increased to 16C due to hot items.
Corrective Action(s): Do not place hot items directly into the cooler. Allow items to cool to room temperature (max. 2 hours) prior to transferring to cooler so as not to overload cooler and to allow for proper air circulation and cooling. Monitor cooling to ensure it is according to the following time/temperature requirments: from 60C to 21C within 2 hours and from 21C to 4C within 4 hours. Once hot items were removed, cooler temperature dropped to <4C. Thermometer present in cooler. Obtain thermometer to monitor temperature of food items.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): No bleach present for sanitizing dishes and food contact surfaces. At the time of the inspection, workers were finishing production. Once advised, staff member purchased bleach to sanitize dishes.
Corrective Action(s): Ensure (ie bleach) that a sanitizer is always present for sanitizing food contact surfaces.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: -Food debris and dirt noted in hard to reach areas, under prep tables and under steaming equipment area.
-Duct tape and plastic are noted on surfaces. Remove these items as they are not suitable surfaces for a food premises and cannot be properly cleaned and sanitized.
-Areas of the wall have exposed dry wall visible.
Corrective Action(s): -Thoroughly clean hard to reach areas to remove all dirt and food debris. Ensure cleaning schedule addresses frequency and level of detail needed to maintain premises in a sanitary condition.
-Remove all duct tape, plastic and repair/replace any surfaces that are not washable and impervious. All surfaces must be, smooth, non absorbent and in good repair to facilitate cleaning so that premises can be maintained in a sanitary condition. Correction date: Nov. 8/17

Observation: Wooden blocks on trays being used to stack trays in cooler. Wood is coming into contact with rice cakes in some cases. Unsealed wood is not a suitable material for a food premises as it is absorbent, cannot be washed/sanitized and splinters could be a risk.
Corrective Action(s): Discontinue this practice. Use alternate item for this purpose which can be washed and sanitized. Correction date: Oct. 27/17

Comments

-Hot and cold running water present
-Liquid soap and paper towel present for handwashing
-Freezers temperature were adequate with the exception of one chest freezer which was not working/not in use *Remove this freezer from premises.
-Sliding door cooler was 2C once hot food items were removed and unit was able to cool. (See violation above)
-Food items were stored 6" off of the floor.
-No signs of pest activity at the time of the inspection.
