Observation (CORRECTED DURING INSPECTION): Egg tarts in hot holding case internal food product temperature ~40 degrees C. Sausage Danish and meat buns in hot holding case internal food product temperature ~35 degrees C.
Corrective Action(s): Supervisor has stated above noted items were baked 1 hour ago. All items re-baked in the oven and placed into hot holding case set at a higher temperature setting. Ensure all hot potentially hazardous foods are stored/displayed at or above 60 degrees C.
