Rosewood, Maplewood, Cedar Hill ECU - Hot holding above 60 C - Dishwasher above 71 C at plate. - Sanitizer in spray bottles at 200 ppm - cooling units less than 4 C. - temp logs good. *Make sure to review spray bottles to ensure 'Ostro San' and 'neutral cleaner' are clearly and accurately labelled. It is especially important that labelling is clear and staff understand given the fact that Quats sanitizer is often a pink colour. This could be confusing to staff as the sanitizer used at LMH is clear and the cleaner is pink. **Discussed with manager the deteriorated state of floor and cabinetry finishes in Cedar Hill and a work order is in process for replacement. Monitor and review again at next scheduled inspection. **Discussed the use of cloths to support dish drying. As discussed transition out of this use. In the absence of a proper drain board or drying rack a plastic board/pan with plastic matting is a better alternative.
