Observation (CORRECTED DURING INSPECTION): The front of the house sanitizer bucket detected less than 200 ppm quat as the solution is too old and require replacing more frequently. Operator informs me the bucket is changed out every 2 hours. A quat sanitizer bottle at 200 ppm was available at the time of inspection and in use.
Corrective Action(s): Ensure to change out solution more frequently when it is busy or when the solution becomes dirty. A 200 to 400 ppm quat concentration is required for adequate sanitizer.

Observation: Presence of fruit flies in back preparation area. Reduction and prevention of fruit flies required. Fly paper observed in back kitchen. Fruit flies can be a source of food contamination.
Corrective Action(s): -Clear out garbage and food debris as soon as possible after preparation to prevent grow of fruit flies.
-Provide lids for compost containers.
-Clean and sanitizer food contact surfaces frequently.
-Replace dirty fly traps as needed. Place fly traps away in locations which would not contaminate service areas.
-Contact a pest control company to reduce/prevent fruit fly population. Install additional fly traps as per pest control recommendations.
Correction required in 2 weeks.

Observation: General deep cleaning needed throughout back kitchen area for old grease, rust and food spills. Please focus on hard to clean areas such as the dishwasher/dishpit/food prep table/ knife rack and behind and under equipment. Repair/replace rust spots and dirty caulking as needed.
Corrective Action(s): Cleaning and maintenance of above noted areas required within 3 weeks.

Front hot displays at 61C to 68C, beans, chicken and peppers. Cold displaying holding units at 4.0C and below.
Beer cooler unit at 3.9C, sour cream unit at 3.0C, grill cooler at 3.7C peppers, stand up freezer at -15,8C corn.
All rice holding units at 60C and above.
Operator states no leftovers were being used at the time of inspection.
