Observation (CORRECTED DURING INSPECTION): Jug of milk stored in the malfunctioning prep cooler had internal temperature measured at 17'C at this time. Discarded.
Corrective Action(s): DO NOT store any cold potentially hazardous food in this cooler until repaired.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) No sanitizer prepared for food prep surfaces. 200ppm chlorine solution was prepared and the staff was advised to have all food prep surfaces sanitized at this time.
2) Low temperature dishwasher had 0ppm chlorine detected at plate level after final rinse. Sanitizer bucket was running low and replaced to a new one at this time. Minimum level of chlorine (50ppm) was achieved at the plate level after final rinse. All dishware washed last two nights to be rewashed through the dishwasher at this time.
Corrective Action(s): Ensure to have 200ppm chlorine solution prepared every morning and sanitize all food prep surfaces BEFORE initiating any food prep in the morning and after each possible contamination during operation as discussed at this time.
Ensure to monitor dishwasher sanitizer level on a regular basis.

Observation: Few containers of raw meat/fish stored beside and above ready to eat foods in walk-in cooler. Garbage bag is used to cover a tray of samosa sheets.
Corrective Action(s): Ensure to have all raw meat/seafood stored below and away from ready to eat foods (i.e. cooked food, vegetables). Do not use garbage bag to cover or store food as these bags are often treated with chemicals.

Observation: Chest freezer by the hallway operating at -13'C.
Corrective Action(s): Ensure to have the freezer defrosted so that it operates at -18'C.

Observation: Few rodent droppings were observed at the back storage area at this time. All food products are stored in closed containers.
Corrective Action(s): Ensure to continue to monitor for droppings on a daily basis and remove droppings as soon as observed. Treat the areas with 1000ppm chlorine (1:50 bleach:water).

Observation: One of the kitchen prep coolers requires a repair. Technician came yesterday and opened the back part but could not be repaired. Technician to revisit the facility within today.
Corrective Action(s): Ensure NO FOOD IS STORED in this cooler until repaired. Contact the health inspector once repaired.

Comments

Routine inspection conducted:

-Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; freezers operating below required temperature of -18'C, except mentioned above.
-Pizza warmer not in use at this time.
-Back storage area satisfactory. Foods stored in and covered with food grade materials. Good.
-Traps in place. Professional pest control company contracted.

Improvement has been observed in terms of facility's general sanitation level, especially the back storage area. However, more attention is required for the general operational practice. Refer to the above violations.

Follow-up inspection to be conducted tomorrow on/before Monday, Feb 24, 2020. Until approved by the health inspector, facility CANNOT store any potentially hazardous food in the prep cooler, EVEN AFTER IT HAS BEEN REPAIRED by the technician. Please contact the health inspector to reschedule.
