Observation: Rodent droppings still observed in the following areas: Below the 2 compartment sink, below the dishwasher, floor below the upright freezer unit outsider the walk in cooler.
Corrective Action(s): Thoroughly clean and sanitize all floor surfaces.

Observation: Sandwich cooler temperature gauge observed to be set at "maximum" and is just below 4c.
Corrective Action(s): Contact repair technican to have unit serviced.
Monitor daily the cooler temperature as per you temperature log.

Observation: Wiping rags observed being stored at workstations when not in use
Correction: Wiping rags when not in use must be stored in a sanitizer container and kept fully submerged. Solution to be changed every 2 hours or more frequently depending on the organic load introduced into the sanitizer.
Recommend using "QUAT" sanitizer at 200ppm as this does not impart any odor onto food or food prep surfaces.

Observation: One sandwich prep cooler not properly cold holding. Temperature at 8c. All PHF's relocated.

**Temporary sponge material installed at back door to prevent pest entry. Replace sponge material with proper hardened plastic weather stripping.
**Continue to deploy glue boards at night
