-Note: Mixing cups are washed and sanitized twice a day at start of day and end of day according to operator. This was approved by a previous inspector according to the operator. Any equipment used to handle potentially hazardous foods at ambient temperature must be cleaned and sanitized properly according to the food safe level 1 book
