Corrective Action(s): DO NOT USE THE GLASSWASHER UNTIL IT IS REPAIRED. Ensure that at least 12.5ppm iodine is produced.

Comments

- Handsinks are stocked
- 200ppm QUAT sanitizer available
- Temperatures of refrigeration units are adequate (<4C coolers, <-18 freezers)
- Hot holding food (soup) measured >60C
- Temperature log is available for refrigeration units & dishwasher. **Temperature monitoring of the dishwasher should be carried out in the morning.
- Discussed temperature monitoring after cooking
- Pest control received on a monthly basis. No signs of pest activity observed. **Discussed positioning of rodent traps with the operator. All staff should be trained on how to position the traps appropriately for proper pest control. (traps shall be positioned along the wall)

ATTENTION:
- General cleaning of the facility requires attention. Observed some food debris under racks & coolers throughout the kitchen, including the walk-in coolers.
- Ensure to keep monitoring temperature for high temp dishwasher. If 71C is not reached at plate's surface, DO NOT USE IT AND CALL FOR REPAIR.
- Submit a Food Safety Plan for cultivation of plants
