Observation (CORRECTED DURING INSPECTION): Wiping cloths still not stored in sanitizer.
Corrective Action(s): WIping cloths must be stored in sanitizer when not in use. Have a sanitizer bucket in all prep areas.

Observation (CORRECTED DURING INSPECTION): This is a repeated violation. Employee observed to wash gloved hands.
Corrective Action(s): Gloves are not a substitute for handwashing. EAch time gloves are soiled, gloves must be discarded and hands properly washed before putting on a new pair.

CORRECTION ORDER IS STILL IN EFFECT
- minor improvements made:
> ice wands purchased - ensure that these are stored in a clean bucket, or wrapped while in the freezer to prevent cross contamination
> rice scoop in water
> bean sprouts and jalapenos in ice water - do not fill bucket above water line

- operator to attend a compliance meeting next month to discuss issues and next steps
