Observation (CORRECTED DURING INSPECTION): Foods in the hotholding unit were around 48 degC.

Observation: There's an accumulation of food and grease build up under the cooking equipment, on food bins inside and outside the walk-in cooler, along the edges of the walk-in cooler (inside).
Corrective Action(s): Thoroughly clean the kitchen. Move the cart and shelves from inside the walk-in cooler and clean the floor/walls; clean under the cooking equipment; clean the fan grate in the walk-in cooler, clean all the food bins inside and outside the cooler.

General observations:
Walk-in cooler was 4 degC
Pop cooler was 4 degC
Small chest freezer was -18 degC
In Storage unit #10: large chest freezer was -19 degC; upright cooler temperature was 4 degC, but there were no foods stored inside the cooler.
Front hand sink was fully equipped.
Chef has taken FS level 1 on Jan. 16, 2023 (Expiry Jan. 16, 2028).
One of the neighboring units has complained about a leak along the shared wall. They share the wall with you and another neighbor. There was no obvious leak along the wall of the neighboring unit. The leak may be from your unit, however, it's hard to gain access to the investigate. After cleaning issues have been addressed, seal the wall edge and provide baseboards as required.
