Observation: Chicken legs, duck and ribs in the warmer in the front were around 45 degC. These were being stored on top of a tray in the warmer.
Corrective Action(s): The meats were discarded. As discussed previously, DO NOT STORE MEATS THIS WAY IN THE WARMER. They need to be placed directly in the inserts.

Observation: Observed a cockroach by the grill.
Corrective Action(s): Pest control is on contract. Improve sanitation.

Corrective Action(s): Replace dry storage bins in the dry storage room as they're peeling at the bottom; clean the shelves; clean the walls and fan grates in the back walk-in cooler, clean under the cooking equipment, inside the cupboards; tanks.

Observation: Display freezer in the kitchen is at 4 degC. Staff turned freezer off because the fan was icing over. Repairman to come today.
Corrective Action(s): Do not refreeze the items in this freezer. Cook the foods and use up as discussed. Do not use this freezer until it's fixed.

Observation: The shelves in the back walk-in cooler are rusted, the walls of this cooler are pitting. The flooring under the cooking equipment in the 2nd kitchen is wearing out.
