Observation (CORRECTED DURING INSPECTION): Three samosas in hot holding unit at 36C. Owner stated they were cooked and placed in unit around 11am which was just over 2 hours ago. Unit was adjusted during inspection and samosas discarded. All hot held foods must stay 60C or above at all times or be discarded after 2 hours. Hot holding unit must be 60C or higher before being used to hot hold foods. Purchase a thermometer for monitoring temperature in this unit. Do not use this unit for hot holding until an accurate thermometer is in this unit.
