Observation: 1. Products are stored on ground acorss from chest freezers, along hallway by washroom, and in storage room.
2. Light covers are missing at front preparation area and back kitchen.
Corrective Action(s): 1. Products must be stored at least 6 inches above ground to facilitate cleaning, and for pest monitoring.
2. Install light covers.

Observation: Rodent droppings are observed near back door, and on floor in storage room. Pest control company visits monthly or bi-monthly.
Corrective Action(s): Pest control company must come at least once a month.
Remove droppings and sanitize areas.
Seal all entry points.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulation of grease, debris and/or filth is observed in the folloiwng areas:
-->Lid for sushi rice holder.
-->Sugar syrup bucket and surrounding.
-->Microwave.
Corrective Action(s): Clean the above mentioned areas.
This is the second consecutive obervation with sugar syrup placed on top of cardboard with dried sugar all around bucket and area. Operator must find another way to store sugar syrup.

Observation: Cardboard is used as floor mats, counter liner, or bucket liner.
Corrective Action(s): Do not use cardboard as all surfaces must be durbale, easily cleaned and impervious to moisture.

Observation: Domestic cooler under sushi counter is too warm, at 8.0oC. No thermometer is in cooler for monitoring.
Corrective Action(s): 1. One thermometer should be in cooler for accurate monitoring.
2. Check if cooler is operational. Adjust or fix if required.
3. If a new cooler has to be purchased, a commercial cooler must be purchased.

Observation: A domestic deep fryer is observed at the front preparation area next to domestic cooler on counter. No commercial ventilation in facility.
Corrective Action(s): Remove deep fryer from facility. Do not make foods that generate grease in facility.
This is the second consecutive inspection with observation.
