Observation (CORRECTED DURING INSPECTION): Surface sanitizer is unavailable at the time of inspection.
Test strips at 0.0 ppm of Chlorine of Quat (a spray bottle with a sanitizer).
Corrective Action(s): Immediately. Replace cleaning agent for a sanitizer (Chlorine solution at 100 ppm or Quat at 200 ppm) Sanitizer must be available all the time.

Observation: Accumulation of grease on a fan hood (Due day for cleaning 27.07.2019 as per the label).
Hard to reach areas (eg., pipes under the front prep. tables, on prep. tables, and the back wall)- food debris accumulation).
Corrective Action(s): Fan hood must be serviced.
