Observation (CORRECTED DURING INSPECTION): Wiping rag used for wiping down the milk steam wand was wrapped around the milk-frother. This is not a sanitary manner to maintain the equipment as it will promote the growth of bacterial around the milk frother.
Corrective Action(s): Ensure the wiping rag is stored in a sanitizing solution when it is not in use. A 100ppm chlorine solution was prepared at the time of inspection for storage of the wiping rags.

Comments

Routine inspection conducted and the following were noted:
All cooler units at 4C or below and equipped with thermometers.
High temperature dishwasher achieved a final rinse temperature of 71C at plate level.
General sanitation was satisfactory.
All food items stored at least 6 inches off the ground and properly covered.
200ppm chlorine sanitizing solution stored in spray bottle. When using bleach, ensure the solution is diluted properly by mixing 25ml of regular household bleach with 4 liters of water.
Operator has an on-going monthly contract with a pest control company.
One of the two faucet connection for the hand washing station was missing. According to staff, the required plumbing has been ordered to be fixed. Staff can use the secondary hand washing stations available until the deficient plumbing problem has been rectified.
