Food Safe training - in compliance.
Coolers - at 4C/40F or colder.
Freezers - at < -18C/0F.
Hot holding - above 60C/140F with exception of one item (minced food). Reviewed procedures. Food is discarded if >2 hours at <60C. - ok.
Reheating in oven to >74C/165F (not checked today).
Quick cooling - using ice water bath to cool soups.
Hand washing stations - in compliance.
Disposable non-latex gloves are used.
Quats sanitizer is used at concentration required by chemical supplier (300ppm). Records kept - good.
Commercial dishwasher has a final hot water sanitizing rinse (>71C/>160F measured inside of the machine).
Dishwasher temperature records are kept (final rinse water gauge reaches 180F or hotter) - good.
Cleaning is satisfactory. Some food spills noted under the dry storage shelves - clean as per routine cleaning schedule.
Filters/mechanical exhaust scheduled to be cleaned soon.
Pest control program in place. Includes monitoring by licensed pest control.
No obvious signs of pests.
