Observation (CORRECTED DURING INSPECTION): 1. Found inserts sitting on ice on counter (peppers, eggs) to be 16 C.
2. Found cheese on bottom of middle cooler to be 10 C (cooler over stuffed)
Corrective Action(s): 1. Ensure potentially hazardous foods are kept fully submerged in an ice bath at all times. Discard items after 2 hours if above 4 C. If unable to maintain 4 C or colder, will need to install a prep cooler
2. Re-organize food in cooler so there is a good air flow, move items on bottom to another cooler until unit can maintain 4 C or colder

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1. Found a knife being stored between prep cooler and table where heavy grease build up is noted.
2. Meat slicer was put away with food/grease still on it (not used for at least a day)
3. Multiple containers holding "clean" equipment and utensils were foudn with food debris inside the bottom
4. Ice scoop was stored on top of ice machine directly
Corrective Action(s): 1. Ensure knives are stored in a sanitary manner (i.e. in a knife holder, magnetic strip, or container).
2. Ensure meat slicer and all equipment is properly washed and sanitized before putting away.
3. Have all containers holding other equipment and utensils washed and sanitized.
4. Keep ice scoop inside a washable container and wash both scoop and container on a regular basis.

Observation (CORRECTED DURING INSPECTION): Found wiping rags on counter, spray bottles had less then 100 ppm quat.
Corrective Action(s): Keep wiping rags in 200 ppm quat, or replace every hour with new ones. Ensure spray bottles have 200 ppm quat.
NOTE: review with staff how to use sanitizer dispenser (staff filled sanitizer bucket with all purpose cleaner as wasn't sure how to use)

Observation: Found food put into freezer that was not cover, heavy ice build up.
Corrective Action(s): Ensure all food is cover properly when not being used.

Observation: Found heavy food build up and grease under, behind and in between equipment and counters in the front area, as well as on the vents over the cook line and on walls and floors under dishwasher.
Corrective Action(s): Have all of the above noted areas thoroughly cleaned to remove all food and grease.

Observation: Cutting boards are heavily worn (i.e. severely cut and stained) and no longer easily cleanable

Comments

- Coolers were all 4 C or colder except bottom of the 1 cooler previously mentioned
- Freezers were all - 18 C or colder
- Hot holding was 60 C or hotter
- Hand sink had liquid soap, paper towel, hot and cold water
- Dishwasher had a final rinse of 82 C on gauge and 72 C at plate
- Glass washer had final rinse of 12.5 ppm iodine
- No signs of pest control, company is on contract
- Ice machine has been replaced and is in working condition
- Deep freeze with broken lid has been replaced
NOTE: floor in kitchen is still cracked and there is a gap collecting food, repair so floor is easily cleanable.
