Observation (CORRECTED DURING INSPECTION): Found large volumes of food (i.e. rice) in cooler that were 60 C after 30 mins.
Corrective Action(s): 1. Must cool foods as quickly as possible and no longer than 2 hrs for 60 C to 20C, and 4 hrs for 20C to 4C
2. Keep Foods on ice, in ice bath, or use shallow pans at room temp until 20 C is met, then place in cooler to continue.
