Observation (CORRECTED DURING INSPECTION): No sanitizer was available in the front service area or the back food preparation area. Noted several reusable wiping cloths on food contact surfaces and hanging on hooks.
Corrective Action(s): Ensure 100ppm chlorine sanitizer solution is readily available in all food handling areas. Keep all wiping cloths stored in sanitizer solution to prevent microbial growth.

Observation (CORRECTED DURING INSPECTION): Hand wash station in back area did not have paper towel. Also noted squeeze bottle used for soap.
Corrective Action(s): Ensure hand wash stations have paper towel at all times. Liquid soap should also be in a pump style dispenser.

Observation (CORRECTED DURING INSPECTION): Noted bag of frozen scallops stored in container of cold water and frozen fish stored in food prep sink with cold water.
Corrective Action(s): Ensure frozen foods are thawed in cooler unit at 4C or less or under cold running water.

211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
Observation (CORRECTED DURING INSPECTION): Noted 3 boxes of frozen chicken that has just been delivered at room temperature. Staff moved boxes into cooler at time of inspection.
Corrective Action(s): Ensure frozen potentially hazardous foods are put away into proper storage (ie. freezer or cooler unit) upon delivery.

Observation: A) Noted tape around hand sink in the back area

Corrective Action(s): Remove tape and repair/replace equipment as needed. Do not use tape on food equipment/surfaces in food premises.

B) Lights above walk in cooler are still missing cover

B) Install cover/barrier for lights above walk in cooler
C) Clean up mold/mildew and replace caulking around hand sink in the front service area.

Comments

- All coolers 4C or less (walk in, domestic, upright one door...etc)
- All freezers -21
- Hot holding of rice 63C
- Premises makes their own ice in trays then stores them in bags.
- Ice for immediate use is stored in a container at room temperature in the drink making area. Scoop for ice stored outside of the ice in a separate container.
- General sanitation satisfactory. No obvious signs of pest activity noted. Back door was closed at time of inspection.
- Hood ventilation system appeared clean. Cleaned recently on June 12th.
- Low temperature dishwasher had 50ppm chlorine.
- Pegnancy & alcohol warning signage x2 provided. Post one in each public washroom.
- Reminded operator of foodsafe level 1 recertification requirements. Information pamphlet provided.
