Observation: 1.Open bags of flour and grains stored open or twist tied shut in dry storage area.
2. Pototes peeled in bucket in 3 comp sink and another cardboard box of un-peeled potatoes next to sink during dishwashing (after lunch rush).
Corrective Action(s): Ensure all food is protected from contamination.
1. All open packages of food must be re-located into a pest proof container that has closable lid. Open bags of food are possible food source for pests and open to contamination. Re-locate.
Correction date: 1 week
2. Food should not be prepared/processed in dishpit area while dishwashing is in progress. Food should be prepared in food prep sink away from dirty dishes. Cease preparing potatoes in 3 comp dishpit sink.

Observation: Plastic sheet/bag used to cover/protect cooking equipment socked on the side of walk in cooler. 2 large sockets covered by dirty plastic - one clear and one blue.
Corrective Action(s): All materials in premise must be durable, non-absorbent, easy to clean and designed for specific purpose. Remove all plastic sheets and replace with proper hard plastic cover if required. Consult electrician if required.

Observation: Dishpit handsink premixed water feels cold. After 30 seconds water did not get warmer.
Corrective Action(s): Ensure all handsinks are capable of being warm to the touch. Increase water temp. to reach comfortable handwashing temp.

Corrective Action(s): 1.Ensure all staff items are stored in designated storage areas such as staff lockers/ change room/ designated space.
2.Any staff personal food must be stored in designated space (in cooler/shelf) separate from food served to patrons.
