Observation:
Food debris and grease found in corners, on the floor along the base of walls, on walls behind food prep tables, and table legs. Food and grease will attract pests.
Corrective Action(s):
Scrub with soap and hot water to remore the food and grease debris in the mentioned areas. Increase the frequency at which this is done.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation:
During inspection, a FS certified staff member left the premises and the remaining staff member did NOT have the FoodSafe certificate. It is required that a person be present in the facility, at ALL TIMES, that possesses a valid certificate.
Corrective Action(s):
Have all staff register and obtain the FoodSafe Level 1 certificate. Go to www.foodsafe.ca to register for the full course.

Comments

A routine inspection was conducted, the following observations were made:
- The 3-comp sink pipes no longer leak. All of them have been repaired properly.
- The damaged walls behind the pizza assembly table have been installed with stainless steel. The surface is durable, level, cleanable, and sealed.
- The plastic corrugated covers have been discarded and no longer used to cover pizza dough. Good.
- All previous violations have been corrected.
- Hand sink stocked with liquid soap, paper towel, and running hot and cold water.
- Coolers 4C or colder; freezers -19C; and thermometers present.
- All foods stored in food grade containers; covered; in groups with proteins stored separately from RTE foods; and 6" off the floor on shelves.
- Bleach present for sanitizing. No solution was mixed during the inspection.
- General sanitation is satisfactory. Improvement needed in mentioned areas.
- No signs of pests.
- Observed gas deep fryer in use, this was found to be under the existing exhaust canopy. Check with the Fire Dept. and Building Dept. to ensure the existing exhaust canopy to adequate for deep frying.
- No expired food in use. FIFO rules followed.
- BE ADVISED, FoodSafe certificates that do NOT have an expiration date on them will expire July 2018. Go to www.foodsafe.ca to register for the refresher course.
