Observation (CORRECTED DURING INSPECTION): Surface sanitizer in bucket with presoaked wiping cloths measured 0ppm Chlorine concentration.
Corrective Action(s): The staff prepared new sanitizer at 100ppm chlorine concentration. To prepare sanitizer:
- 1 tbsp bleach per 1 gallon water
- 1 tsp bleach per 1L water

Observation: Frozen pastries being thawed on the drainboard of the two compartment sink.
Corrective Action(s): This drainboard must be used for only air drying after manual dishwashing. Thaw frozen pastries on a table away from potential water splashes.

Observation: Missing daily temperature logs.
Corrective Action(s): Immediately begin daily temperature logs for all coolers and freezers. This will be verified during the next routine inspection.

- General sanitation is good. The sides of the garbage bin at the bar needs cleaning.
- Handwashing station (front) supplied with cold/hot running water, soap, and paper towels. Soap dispenser is loose; properly mount the dispenser on the wall.
- Two compartment sink available for manual dishwashing. QUAT sanitizer available at 200ppm concentration.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Espresso machine wand sanitized with 200ppm QUAT sanitizer.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.

- Undercounter cooler (bar area) = 4C
- Undercounter smaller cooler (bar area) = 4C
- Upright cooler with sliding doors (back) = 4C
