For the rinse temp on the dishwasher, read the "final rinse temp" on the gauge A new hole was discovered near dry storage entry - blocked with tile. OK The broken electric heater behind dairy cooler to be removed so the wall and electrical access points can be properly filled Chef and assistant chef met on site - have been provided with an IR thermometer for efficient checking of all temperatures.
