Observation (CORRECTED DURING INSPECTION): < 10 PPM residual detected in the sanitizer spray bottle.
Corrective Action(s): **Issue corrected at the time of inspection** Reviewed with the operator to mix 2 tsp of bleach for every 1 L water to make 100 - 200 PPM bleach solution. 200 PPM chlorine residual was detected in the newly mixed sanitizer.
Purchase chlorine test strips to allow operator and staff to test for sanitizer concentration.

Observation: Fresh mouse droppings noted below the empty pizza boxes shelf, dry condiment container storage shelf and by the dishwashing area.
Corrective Action(s): Clean, sweep and sanitize all areas noted with mouse droppings.
As per operator, they are looking to hire a new pest control company.
Please hire a new company within 1 month and clean the noted mouse droppings today.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Unapproved containers (Home Depot) were being used for direct storage of condiment.
Corrective Action(s): Remove all unapproved containers and use food grade containers for food storage. Unapproved containers are not designed for constant washing and sanitizing and harmful chemicals may leech into food as a result.

Note: Upon arrival at the facility, operator stated that there has been a director change to the business about 2 months ago. They will be changing the business name and Corporation name of the facility. They will also be adding new equipment to the facility in the near future.
Please submit the following due to director change:

Menu List (if different from existing menu)
Food Safety Plan (different as per the new operator)
Sanitation Plan (different as per the new operator)
Operator's FOODSAFE level 1 or equivalent certificate

Reminder for operator to submit an updated floor plan when ready for renovation prior to making any changes to the existing layout of the facility.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Hot hold unit for pizza was holding at 60.0C.
Drain plugs available for the 3-compartment sinks for manual warewashing. Reviewed manual warewashing procedures with operator.
Provided the poster for 3-compartment sink warewashing.
General sanitation and organization satisfactory.
