Observation (CORRECTED DURING INSPECTION): Sprouts and other raw cut vegetables stroed on counter next to wok station measured at 10C at time of inspection.
Corrective Action: Bag of sprouts was placed in cooler at time of inspection
Other vegetables and small amount of sprouts were placed on ice. Potentially hazardous food items must be stored at 4C or below to prevent pathogen growth and toxin production.
Store smaller amounts of vegetables in containers on ice. If food items are above 4C for more than 4 hrs they must be discarded.

Observation: (1) Ice machine had visible debris / mildew on inside near condenser
Corrective Action: Ice machine must be emptied, washed and sanitized to prevent contamination of ice, which is a food items
Monitor ice machine regularly for sanitiation

(2) Bin of chopped cabbage was being stored on top of garbage bin
Corrective Action: Bin was removed from garbage and cabbage was placed in clean container at time of inspection. Garbage bins are unsanitary and are not food contact surfaces. Do not store food on top of bins. Do not use bins for anything but garbage.

(3) Walk-in cooler fans had visible debris and dust build-up and many food items in cooler were uncovered (ie. raw chicken, sauces)
Corrective Action: Wash fans and monitor for dust build-up
All food items must be covered and protected from contamination.

(4) Raw meat stored next to raw vegetables in cooler
Raw chicken above frozen fish in freezer & cooler
Corrective Action: All raw meat should be stroed on bottom shelves and away from ready to eat items.
Reorganize cooler so all raw meats are on bottom shelves
Raw meat should be strored with chicken below, beef and beef below fish to prevent against contamination.

Observation: (1) Air vent screens over prep line area had black dust build-up.
Corrective Action: Clean Air vents to prevent debris from falling in food and to maintain sanitary conditions.

(2) Common touch surfaces and hard to reach areas had visible debris.
Corrective Action: More cleaning is needed in these areas including backsplashes, dry storage under racks, prep cooler handles.

Observation: Paper towel dispenser at prep line handsink is missing
Plastic bin is currently available with paper towels.
Corrective Action: Replace metal dispenser. Current solution is not a long-term solution, as paper towels can become contaminated / wet when reached for.

Observation: Multiple Staff observed outside smoking while wearing chef coats / aprons.
Corrective Action: Chef coats and aprons must be removed before taking breaks to smoke or if going to the washroom to prevent contamination of food items.

High Temp. Dishwasher measured at 50ppm chlorine sanitizer
Ice scoops stored in sanitary condition
Permit posted and valid foodsafe training
Hot-holding units measured at 60C or above
