Second Floor Servery:
- All food items are being prepared in the first floor kitchen. Food is being taken to the second floor - dispensed by cooks. (~ 30 Guests) Quick turnover. All unused food and soiled utensils are returned to the main kitchen for cleaning, disinfection and storage.

- Temperature Control: No concerns noted. Monitoring is required to be conducted. Temperature gauges are required to be visible for staff monitoring.
- Mechanical Dishwashing: All food contact surfaces are to be cleaned and disinfected in the main floor kitchen after use.
- Wiping cloth storage discussed.
- Food Storage: All items are to be stored in covered, food grade containers. Large items are to be stored on lower shelving. No double stacking of food containers are permitted when "saran wrap" is being used to cover food items.
- Sanitary Facility: Acceptable.
- Staff Hygiene: Discussed.
- Pest Control: Monitoring required.
- Structurally: No concerns noted.
