Observation: Frozen ziplock bags of food stored directly on the ground in walk in freezer.
Corrective Action(s): Ensure all food is stored at least 6 inch off the ground at all times even if packaged and frozen. All food must be protected from contamination.

Observation: 1. Back door left open at start of inspection - no screen door in place
2. Gap under door (right side larger then left)
Corrective Action(s): 1. Ensure back door remains closed at all times when door is not in use to prevent pest entry. Re-install back screen door before warmer months to prevent pest entry and allow air flow. Issue in past reports, do not repeat violation. Door closed during inspection.
2. Seal gaps under back door with door sweep. Install door sweeps at back door to prevent possible pest entry under door. Proper fitting screen door may accomplish this once installed again.

-Low temp dishwasher noted: 100 ppm chlorine at the plate
***Temperature logs and sanitizer dishwasher logs not being taken anymore - recommend going back to logging all checks

-Sanitizer bottles noted 200 ppm chlorine
***Label all sanitizer bottles / chemical containers with its contents: "Bleach & Water" or "Sanitizer" (violation noted above)
***Ensure all food contact surfaces are sanitized with sanitizer solution and allowed to air dry. Vinegar is not an approved sanitizer.
***Chlorine based sanitizers (bleach) or QUATS based sanitizers are the only approved sanitizer chemicals to be used in food premises for food contact surfaces. Any other chemicals used for sanitizing must be approved by FHA before use.

-All handsinks fully supplied with hot & cold water, liquid soap and paper towel
-No signs of pest activity noted during inspection
*** back screen door has been removed - ensure it is re-installed before the warmer months when the door will be left open. Until screen door is re-installed the back door must remain closed at all times.
