Observation: Pizzas in warming case did not have a timer set
Corrective Action(s): Timer must be set each time a pizza is put into the case. The reason why FreshSlice is allowed to hot hold pizzas at less than 60C is due to the 2 hour timing. Without the timing system in place, pizzas will not be allowed to be hot held at 35-40C. Please ensure that all pizzas are timed, and discarded if not sold after 2 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Pizza rings (for sauce, toppings, and cheese), cutting wheel and cutting boards are not being washed and sanitized properly. Staff indicate that they are washed every 2 hours, but observed staff only rinsing them with the sink sprayer when asked to please wash them because the store had been open for 3 hours and nothing had been washed yet today.
Corrective Action(s): Please ensure that all utensils and food contacts surfaces are washed, rinsed and sanitized every 2 hours in the 3 compartment sink according to the method and directions posted on the wall above the sink.
