Observation (CORRECTED DURING INSPECTION): Cook was observed wearing sandals in kitchen.
Corrective Action(s): Ensure to wear fully covered, nonslip foot wear when working in food premise. Open toe foot wear is not sanitary nor safe against accidents like falls and hot spills.

Comments

Previous infractions have been corrected:

1. The hole in the wall in the kitchen has been repaired.
2. Food is now protected from contamination. No food storage observed stored on the ground.
3. Old kitchen equipment has been discarded.

Education was provided to operator. Recommendation was provided to manager to conduct dishwasher temperature checks and log temperatures for safety checks. 71C is required inside the dishwasher on the plate to ensure adequate sanitization.

Operator informs me a new hot water tank was installed last week. Upon inspection, all sinks and taps are able to produce hot water at above 40C.

Facility now in compliance.
