Observation:
QUAT sanitizer dispenser in Ruby/Emerald servery is not working. After multiple attempts and changing the sanitizer bottle, the adequate level of sanitizer was not being dispensed. Operator placed dispenser out of order at the time of inspection and called technician for repairs.
Corrective Action(s):
Repair/service QUAT sanitizer dispenser in Ruby/Emerald servery. Ensure sanitizer is dispensing 200 ppm QUATs for adequate sanitation level.

In the meantime, QUAT sanitizer is available from another servery in the building and brought down to Ruby/Emerald servery.

Follow-up Inspection:
Inside of main kitchen dishwasher has now been cleaned. Operator informed that deep dishwasher cleaning will be done weekly as per their updated cleaning schedule.
Inspections conducted of six serveries (see below).

Servery 1: Ruby/Emerald
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
High temperature dishwasher sanitizing with 74.1 degrees Celsius at dish level after final rinse cycle.
Cooler temperature = 2.1 degrees Celsius.
Temperature and dishwasher logs maintained.
General sanitation very good.

Servery 2: Pearl/Garnet
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
High temperature dishwasher sanitizing with 77.3 degrees Celsius at dish level after final rinse cycle.
QUAT sanitizer at dispenser = 200 ppm.
Cooler temperature = 4 degrees Celsius.
Temperature and dishwasher logs maintained.
General sanitation very good.

Servery 3: ABI:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
