Observation (CORRECTED DURING INSPECTION): Noted a stir fried beef in a warmer @ 37oC. Reheating in the warmer for 1 hour.
Corrective Action(s): This is not an acceptable reheating procedure. The warmer cannot bring reheating temperature quickly upto 71oC or higher. Reheat food on the stove and transfer into the warmer.
