Observation: Repeat violation: Cooling log records are maintained inconsistently. Currently staff who prepared food dishes are the same person responsible for documenting cooling process within blast chiller. Some staff provide detailed documentation that indicates food items cooled rapidly to ensure food safety, while some staff do not track the cooling rate of any products after cooking.
Corrective Action(s): Foods must cool from 60 C to 20 C in less than 2 hours and following, from 20 C to 4 C in less than 4 hours.

Cooling rates must be verified using a probe thermometer and documented according to premise Food Safety Plan.

Management must ensure documentation is consistently maintained by responsible kitchen staff for all cooled food items.

Observation (CORRECTED DURING INSPECTION): Kitchen station: Some sanitizer reservoirs are below 200 ppm Quaternary Ammonia. Some staff are not placing their wiping rags in use within the sanitizer reservoirs.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Operator changed sanitizer buckets at time of inspection.

Ensure sanitizer buckets are tested and changed frequently to maintain 200 ppm Quaternary Ammonia.

It is recommended that the automatic sanitizer feeder dispenses for 2 seconds before placing feeder hose into bucket to ensure correct sanitizer strength is provided.

Observation: Warehouse area: Trace mouse droppings observed in the following areas - in corners of both ends along the west wall, at the left side of bay door #2, and near the NE corner of the warehouse.

Bakery - dry food debris collecting on floor behind small corner mixer unit and along adjacent wall leading to the windows.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
