Observation (CORRECTED DURING INSPECTION): Ambient temperature of upright server area cooler was measured between 5 and 8 degrees C (lowest temperatures reached over the course of the inspection). Internal temperature of probed items measured approximately 7 degrees C, with the exception of recently added items (4 degrees C).
Corrective Action(s): Perishable items such as cream and milk were moved to another cooler at 4 degrees C or less as a precaution. Ensure that no perishable (potentially hazardous) foods are stored in this cooler until it is capable of maintaining foods at an internal temperature of 4 degrees C or less to limit the growth of potential pathogens and/or toxins.

Observation: Approximately 10 ants observed at far left side of cook line near kettles (floor to wall junction area).
Few flies observed.
Corrective Action(s): Contact a licensed pest control operator to address above-noted pest concerns. Follow recommendations provided by pest control operator. Note: Small amount of food debris located on floor behind cook line. Clean area to remove any potential food sources for pests/insects. Date to be corrected by: March 11, 2019.

Observation: Hole observed in wall behind right kettle at cook line. Insulation showing.
Corrective Action(s): Have hole properly sealed. Ensure that all holes are sealed to prevent potential entry of pests. Date to be corrected by: March 18, 2019.

Observation: 1. Door seal on upright cooler located beside prep cooler is in poor condition. Door seal has completely peeled away in some areas.
2. Server area upright cooler unable to maintain food at an internal temperature of 4 degrees C or less.
Corrective Action(s): Ensure that a new, proper fitting door seal is in place at the above noted cooler (1.) to allow for proper cleaning of seal and to prevent the loss of cold air. Date to be corrected by: March 18, 2019.

Note: Temperature logs maintained for dishwasher and cold holding units. Reminder to ensure that temperature logs are maintained as per your food safety and sanitation plans, and that corrective action is taken if temperatures fall outside of required parameters. It is recommended that all cold holding units be clearly labeled on record sheet. Preparation cooler is missing from records. Reminder that dishwasher log states "low temperature dishwasher" and "requirements for rinse & wash cycles: 140 F." Update dishwasher log sheets for a high temperature dishwasher and include the correct parameters for minimum wash and rinse cycle temperatures.
