201 - Food contaminated or unfit for human consumption [s. 13]
Observation: Two bags of flour found where mice had chewed into bag, flour observed spilled out next to bag with mouse droppings in spilled flour.
Corrective Action(s): Discard bags of flour, inspect every bag of flour and similar type products and discard any product that is broken/torn/chewed into. Inspect all other foods that are stored in packaging where mice could chew through (ie paper or soft plastic based) and discard if any evidence of being tampered by mice is found. Due: Today.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Walk in cooler ambient temperature at 12C, multiple food items probed and were at the same temperature. Staff stated that this morning water was found coming from ceiling of unit so they called a refrigeration company which is due to come in tomorrow morning. Sorted through products and high risk foods were discarded, while lower risk foods were moved to one of two coolers.
Corrective Action(s): Discontinue use of this cooler for any potentially hazardous foods until it is repaired and can consistently maintain 4C or less.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low temperature dishwasher had no detectable level of sanitizer in the final rinse cycle. ***This is a repeat infraction***
Bottle of sanitizer was very pale in colour indicating that a significant amount of the active ingredient has evaporated.
Corrective Action(s): Replace bottle of sanitizer and ensure that the final rinse has a 50ppm residual. Due: Today

304 - Premises not free of pests [s. 26(a)]
Observation: Significant number of mouse droppings found throughout the premise. Significant build-up of flour observed throughout premise which mice can feed on. Hole observed in the back corner of the unit between the back door and the upright cooler. Hole also found under walk in cooler door with mouse droppings found of floor of walk in cooler. Pest control company currently comes in monthly, last inspection was on April 3rd with no pest activity noted inside. Bait box also observed inside under shelving unit left of upright cooler beside back door.
Corrective Action(s): 1) Give premise a deep clean, removing all mouse droppings, cleaning and sanitizing all areas where mouse droppings were found.
2) Seal up above noted holes with a material that mice cannot chew through (ex steel wool or for the cooler door, new metal weather stripping.
3) Call pest control company today and have them do a detailed inspection of unit to identify areas of concern and follow all recommendations made by pest control company.
4) Have pest control company remove bait box as the bait inside can pose a significant hazard to food inside, this must only be used outside.

Observation: 1) Shelves on shelving unit in back right corner of bakery (between ovens and row of mixers) constructed of raw wood. Raw wood is absorbent and not easily cleanable though they are still in good condition
2) Flour observed being stored in a large black Rubbermaid garbage can intended for domestic garbage. This is not intended for direct contact with food.
Corrective Action(s): 1) Seal shelves with at least two coats of sealant (ex light coloured paint) or replace shelves with a durable, easily cleanable material such as ridged plastic, metal, etc. Due: April 27, 2023
2) Replace garbage can with a food grade container. Due: April 27, 2023
