Observation: Dishwasher chlorine level between 10-50ppm (around 25ppm).
Bleach is available for sanitizing dishes in 2 compartment sink.
Correction: Use dishwasher to clean and wash the dishes.
Sanitize in 2 compartment sink after cleaning in dishwasher with bleach sanitizer. Ensure that bleach is between 50-100ppm. 100ppm is recommended for soaking in sink.

Observation: Dishwasher is measuring 0-10ppm Chlorine.
Glass washer has not been reinstalled.
Correction: Fix dishwasher to ensure it measures 50-100ppm Chlorine.
In the meantime, wash in dishwasher and soak dishes in sink (2 compartment). Ensure the sink is clean and sanitized before soaking.

-Chlorine test strips are available for testing levels.
-Use test strips for monitoring dishwasher to ensure it measures 50-100ppm Chlorine during sanitizing/final rinse cycle.

Please call when glass washer is installed and renovations at the bar are complete.
