Handsinks (operated via foot pedals) were properly supplied.
All three walk-in-coolers (designated for separate storage of raw chicken, deli meat, and dessert) were at or below 4 degrees C.
Walk-in-freezer was at or below -18 degrees C.
Fan covers appeared clean. Lights were encased in shatterproof covers.
Refrigeration units were equipped with thermometers.
Hot-held food was at or above 60 degrees C. Hot-holding unit was equipped with a thermometer.
Store Co-Manager confirmed that raw whole chicken is cooked to a minimal internal temperature of at least 82 degrees C and each batch of cooked food is checked with a probe thermometer.
Temperature records for cooking internal temperatures, hot-holding, and refrigeration units were available.
Food storage areas appeared clean and organized.
Probe thermometer was available.
Ware-washing sinks were supplied with hot and cold running water. Built in sink plugs were available.
200 ppm QUATS sanitizer was available from the dispensers at both three-compartment sink units and inside the spray bottles.
No signs of recent pest activity were evident at the time of inspection.
Pest control program is in place via Orkin on a monthly basis.
