Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not prepared at time of inpsection.
Corrective Action(s): Operator prepared bleach solution (1 tsp bleach per 1 liter of water in spray bottle). Ensure to keep this in your food prep area at all times and label the bottle SANITIZER.

Routine inspection conducted:
-Handsink equipped with liquid soap and paper napkins --> ensure to use paper towels, operator is waiting on paper towels from supplier to arrive.
-Walk in cooler: 3.4 deg C
-2 freezers inside walk in cooler with precooked frozen donair meats: <-18 deg C
-Prep cooler was at 3 deg C (top and bottom), has been serviced since last visit
-Hot holding unit: 66 deg C-->Ensure that the water underneath the meat trays is filled before turning unit on so that the meat trays are actually submersed in the hot water.
-General sanitation ok, no signs of pests
-Operator discussed wanting to install a ice cream unit supplied through Chapman's. Told operator that the unit must have a dipper well and be close to your existing handsink and 3 compartment sink for ease of hand washing and ware washing. If any construction is done, please ensure to submit a new floor plan.
