Observation: Walkin cooler and walkin freezer have been installed. A wall has been taken down in older kitchen area. These renovation/changes have been made without any health approval.
Corrective Action(s): Do not make any changes without notifying the health department. In future, you must contact Environmental Health Officer before making changes to construction, menu, and any plans related to operation.

104 - Permit not posted in a conspicuous location [s. 8(7)]
Observation: Health permit was not posted in visible location during time of inspection.
Corrective Action(s): Health permit must be posted at all times and must be located in a location that is visible to the public/customers.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Preperation/storage shelves in back cooking area (for sweets) are lined with newspaper. Newspaper is not to be used for any food contact areas as it can lead to contamination of food.
Corrective Action(s): Remove immediately. All storage shelves and areas must be easy to clean at all times.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: All walkin coolers, under the counter coolers must have thermometers.
Corrective Action(s): Replace all thermometers in each cooler.

Additionally, you should have a temperature log for each cooler.

Comments

Routine inspection.
All handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
NOTE: Do not block the handwash station in food prep area (new kitchen side) with any items including brooms/mops.
All walkin coolers are at 4c or below.
Front display coolers at 3c.
No hot holding units are in operation at this time.
Foods found to be cooling properly using ice wands and within required time/temperature controls.
All dry storage items are located off the floor.
All foods are covered with plastic wrap or food grade material.
Bleach water sanitizer is at 100ppm concentration.
Dishwasher at 50 ppm concentration for sanitize cycle.
All employees observed to be wearing proper protective wear (aprons, hair nets).
Washrooms are equipped with hot/cold running water, liquid soap and paper towels.
Pest control is in place. Orkin pest control is contracted on monthly basis for pest control inspections.

The following requires operators attention:
1. see above noted violations.
2. Ensure to do all food packaging/preparation in designated areas. The front storage room/meeting room area is not designated space for any food storage or preparation.
3. There is a chest freezer that is not in operation in back cooking area (sweets area) that must be removed if it is not working. Do not keep any equipment not needed for operations onsite.
