Observation: * Boxes and other non food stuff found being stored with food equipment (eg. spatulas, utensils, etc, on top of boxes) and clutter found on some shelving that requires reorganization to reduce risk of cross contamination issues
Corrective Action(s): * Reorganize shelving in both kitchens where clutter and non food stuff and boxes stored and keep food stuff separate from non food stuff. Organization on shelving is key to reduce risk of cross contamination in both kitchen areas.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Build up of grime/debris noted in both kitchens particularly behind food equipment and legs/bases/wheels and baseboards that requires immediate cleaning attention to maintain sanitary condition. Also, doorways and trim had build up of grime/debris requiring immediate cleaning attention and maintenance.
Corrective Action(s): * Remove all build up of debris/grime through out both kitchen and storage areas, including walk-in coolers(around wheels, etc) and maintain on regular rotational schedule

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: * Broken/missing baseboard tiles require replacement and wall board that has deteriorated to be replaced/repaired around door ways, etc. to allow proper cleaning/maintenance to occur
Corrective Action(s): * Repair all areas where baseboard missing/broken and wall board deteriorated so that these areas are easier to clean/maintain

Comments

* Dishwasher final rinse in back kitchen was found to be 74'C/165'F or hotter internally at plate surface
* Glass washer final rinse in front bar was found to be 50 ppm chlorine residual at glass surface
* Food was covered overall through out both kitchens
* Staff were dressed appropriately with hair protection and uniforms
* Monitoring records were available and up to date for temperature/cleaning checks; ADD DAILY SANITIZER checks and glass washer sanitizer rinse checks; provide test strips for sanitizers at all times to check solution at proper concentration
* Hand washing stations had liquid soap and paper towels available
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder
* Menu still same
* NOTE: move fly control devise AWAY from food area (eg. into corner by door in back kitchen)
* NOTE: keep all brooms, chemicals, etc., away from food areas-- stored in back mop room to reduce contamination issue
* NOTE: Build up of grime/debris noted again and needs immediate and more regular cleaning/maintenance on rotational basis
* NOTE: Reorganization on food storage shelving required in some areas in both kitchens to maintain sanitary condition and reduce cross contamination issues
* NOTE: Some repairs to baseboards/wall board to be completed to allow easy cleaning/maintenance
* Follow up inspection to be done: October 17th, 2017 for all above items
