Observation (CORRECTED DURING INSPECTION): Opened can of sauce stored in the original can. This allows metals from the can to be leeched into the sauce.
Corrective Action(s): Transer the sauce into a food grade container for storage. Do Not use can as a storage container after it is opened.

Observation (CORRECTED DURING INSPECTION): Frozen meat was thawing at room tempearture. Food temperature measured at -2C.
Corrective Action(s): Frozen meat was transfer into a functional cooler. Frozen food products must be thawed in a functional cooler, under cold running water or with microwave. DO NOT thaw food at room temperature.

Routine inspection:
- Coolers (prep, under the counter, stand-up, sushi bar) maintained at 4°C or less.
- Chest freezers maintained at -18°C or less.
- Miso soup hot held at 71°C.
- Hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- 200ppm bleach sanitizer available in pails and spray bottles. Instructed the operator to stored wiping clothes in the pail with the sanitizer when not in use.
- Low temperature dishwasher dispensed 50 ppm bleach sanitizer.
- Ice machine maintained in sanitary condition.
- Exhaust canopy maintained in a sanitary condition.
- Food stored off the ground and covered.
- General sanitation satisfactory.
- No pest activities observed.
